The Saint Epine from Herve Souhaut is crafted entirely from ancient vines (100+ years old!) on the estate, that Herve tends to with the utmost care.
The fruit is hand harvested, fermented as whole bunches in wood tanks before being set down to age on its lees in used oak.
The wine explodes with aromas of spice, orange and purple florals; red berries spiced with black pepper. It's a wine to sit back and ponder; impeccably crafted and effortlessly elegant. Will greatly reward those patient enough to give it a bit of time in the cellar.
