Joe Holyman never wanted to make a Pinot Gris - if he doesn't drink it, he doesn't make it.
That was until he discovered a few moreish, textural styled Pinot Gris' that are made with skin contact and a little seasoning from some older oak - those got his attention.
And so, this wine has emerged from his cellar. It's Pinot Gris in its most naked, bare-faced form.
No additions, no preservatives, just rosy, fresh strawberry-splashed Gris juice that is begging for a chill.
