The Dash Farms Cabernet Sauvignon from Joshua Cooper is a beautiful expression of cool-climate Cabernet that’s both powerful and poised. Sourced from Dash Farm, a late-ripening vineyard just outside the Macedon Ranges, this wine is all about elegance wrapped in intensity. The site’s slow-growing fruit produces beautifully concentrated flavours that Josh has expertly transformed into something remarkable.
In the glass, a bright garnet hue hints at the vibrancy within. On the nose, waves of creamy cassis, red cherries, and raspberries mingle with floral notes of lavender and violet, underpinned by a savoury graphite complexity and a subtle herbal lift. Medium-bodied yet full of flavour, this Cabernet delivers a refined palate with fine, silty tannins and a delicate touch of oak.
This wine is beautifully balanced – lively and fresh for drinking now, but with the potential to develop even more depth in the medium term if you can resist it. But be warned: it’s hard to hold off once you’ve had that first taste.

"Has that proper stink of choc-mint, cassis, lavender and Chesterfield with whiffs of tobacco and clove. Fragrant as, an almost alpine experience of all that, so damn inviting and pretty, from hello. Succulent texture if not pure gloss and shine, ultra fine tannin, a fresh core of blood orange in cassis, milk chocolate, mint and saltbush with white pepper to taste. Wonderful, refreshing, just medium weight red of light savouriness and general prettiness. Righteous stuff."
