The 2023 Ca’ Montini Pinot Grigio is a step up from the usual, crafted from the single vineyard “Terre di Valfredda” in Trentino. Planted in 1998 and using traditional Pergola trellising, the site allows for slow ripening while keeping the grapes fresh and disease-free, thanks to natural shading and excellent airflow.
In the winery, it’s all about letting the fruit shine. Hand-sorted bunches are gently pressed, with fermentation using indigenous yeast in stainless steel tanks. Skipping malolactic fermentation keeps the acidity bright and lively, perfect for showcasing its cool-climate origins.
