"Hatari" is the name of the first vineyard that Attila Homonna bought when he started his natural, organic winemaking label back in 1999. Starting with vines that were over 100 years old, the vineyard has been slowly replanted ever since.
This wine is a labour of love, with the grapes hand-picked and fermented with wild yeast in a mixture of old Hungarian and Austrian oak barrels. With a gentle touch in both the vineyard and the winery, Homonna takes a minimal intervention approach, adding only a small dose of sulphur before bottling.
A wine of contradictions: lean yet textural, lush yet minerally, but always delicious.
