Ask Unico Zelo winemaker Brendan Carter the reason for the name 'Pipe Dream' for this wine and he chuckles, explaining that he has a pipe dream that one day Nero d'Avola will be planted more widely in Australian than Shiraz.

This wine is all about exploring what Nero can do from a cooler climate in the Adelaide Hills (Birdwood specifically) as opposed to its usual warmer Aussie homes of Heathcote, McLaren Vale and Riverland.
The resulting wine is impressive, pulsating with both brightness and concentration, whilst never losing its natural acidity.
Not a lot made, but absolutely delicious! The perfect drop for when you're feeling a little fancy.
