This isn't a classic Pet Nat from Rory Lane, it's a slightly modified take on the traditional sparkling style.
Instead of bottling the primary ferment before it's dry, Rory ferments this dry then allows it to rest on lees for a year, before adding back some unfermented juice from the following year to induce the fizz.
The theory behind this is that this method gives you a more textural style of sparkling and it's also a cleaner end product rather than some of the wilder characters that can be produced by the traditional method.
Essentially this is a creamy, fizzy, fruity wine that delivers a level of complexity you don't often find in Pet Nat.
